We crafted & brewed this no-boil “raw” IPA with our pals at 1840 Brewing Co. out of Milwaukee, WI.
For our purposes, the term “raw” refers to the process of holding the temperature of the wort at 170 degrees Fahrenheit to achieve pasteurization. We did not boil this beer, as we wanted to maintain the integrity of the grains we used (barley, oats, wheat, spelt) to add layers of depth to the overall final product. The character of each grain is highlighted in a way in which each is experienced in a form closest to its original state.
We also put our chosen hops — Galaxy & Strata — into the whirlpool stage of the brewing process at the same sun-boiling temperature to issue forth a soft, yet vivid citrus & tropical fruit hop presence.
A dense, yet surprisingly light malt body melds well with a bold hop schedule, making this ale pleasing to all the senses.
